‘Date Night’ Apple and Date Tartlet

The perfect ‘date’ night recipe by Kate Preston.

 Ingredients:

  • 100g pitted dates
  • 1 apple, finely sliced into long segments
  • 2tsp sugar
  • Pinch cinnamon
  • 75g plain flour
  • 25g butter
  • Pinch of salt
  • Approx. 50ml cold water

Method:

  1. Soak dates in a bowl of boiling water for 20 mins whilst you make your pastry. Preheat oven to 180 degrees celsius.
  2. In a bowl rub together the flour salt and butter until it resembles breadcrumbs.
  3. Add cold water a splash at a time. Your pastry dough should be damp enough to combine but dry enough to roll and shape.
  4. Use a rolling pin to roll out your pastry dough until 1cm thick, and mould into ramekins.
  5. Blitz the dates, cinnamon and sugar in a blender until it resembles a smooth paste.
  6. Spoon the date mixture into the pastry tartlets and top with the apple slices.
  7. Bake in the oven until golden.
