‘Date Night’ Apple and Date Tartlet
The perfect ‘date’ night recipe by Kate Preston.
Ingredients:
- 100g pitted dates
- 1 apple, finely sliced into long segments
- 2tsp sugar
- Pinch cinnamon
- 75g plain flour
- 25g butter
- Pinch of salt
- Approx. 50ml cold water
Method:
- Soak dates in a bowl of boiling water for 20 mins whilst you make your pastry. Preheat oven to 180 degrees celsius.
- In a bowl rub together the flour salt and butter until it resembles breadcrumbs.
- Add cold water a splash at a time. Your pastry dough should be damp enough to combine but dry enough to roll and shape.
- Use a rolling pin to roll out your pastry dough until 1cm thick, and mould into ramekins.
- Blitz the dates, cinnamon and sugar in a blender until it resembles a smooth paste.
- Spoon the date mixture into the pastry tartlets and top with the apple slices.
- Bake in the oven until golden.
