Rudolph the Red-Nosed Porridge Bowl

This Rudolph-inspired porridge is a festive twist on humble porridge that is guaranteed to warm you up from the inside out. It is also packed with fibre and energy to power you through your Christmas shopping trips or essay finals!

Ingredients

  • 40g porridge oats
  • 200g milk
  • 1 apple, diced into bitesize chunks
  • 2 tbsp honey (or more if you like a sweeter porridge)
  • 1 tbsp sugar
  • Dried fruit (such as raisins, mixed peel, sultanas, dried cranberries)
  • Zest of 1 orange
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • ½ tsp ginger

Method

  1. To a saucepan add the apple chunks, honey, sugar, a generous splash of water, cinnamon, nutmeg and ginger
  2. Cook until the apple has softened and you’re left with a lovely golden apple sauce.
  3. Add the dried fruit and orange zest.
  4. Then add the oats and milk and continue to simmer until you reach a creamy consistency.
  5. Pour porridge into your favourite bowl and decorate with a dollop of jam, more dried fruit and an additional sprinkle of cinnamon
