Easy-cheesey Potato Skins

What’s not to love about a piping hot jacket potato, stuffed with bacon and cheese? These scrumptious skins from Kate Preston do perfectly as a lunch, snack, side dish, starter.

Ingredients

  • Jacket potatoes
  • Cheese, grated
  • Spring onions, finely chopped
  • Crispy bacon, finely chopped
  • Salt and pepper
  • Splash of milk

Method

  1. Bake or microwave your jacket potatoes until soft and fluffy inside (this should take around 10mins in the micro but timing is dependent on the size of potato).
  2. Once cool enough to handle, half the potatoes and scoop out the insides into a mixing bowl.
  3. Mix in your grated cheese, spring onion, bacon bites, milk and a pinch of salt and pepper, and scoop the mash back into the skins. Sprinkle with a final grating of cheese and bake in the oven for around 15 mins, or until the cheese has melted.
