Easy-cheesey Potato Skins
What’s not to love about a piping hot jacket potato, stuffed with bacon and cheese? These scrumptious skins from Kate Preston do perfectly as a lunch, snack, side dish, starter.
Ingredients
- Jacket potatoes
- Cheese, grated
- Spring onions, finely chopped
- Crispy bacon, finely chopped
- Salt and pepper
- Splash of milk
Method
- Bake or microwave your jacket potatoes until soft and fluffy inside (this should take around 10mins in the micro but timing is dependent on the size of potato).
- Once cool enough to handle, half the potatoes and scoop out the insides into a mixing bowl.
- Mix in your grated cheese, spring onion, bacon bites, milk and a pinch of salt and pepper, and scoop the mash back into the skins. Sprinkle with a final grating of cheese and bake in the oven for around 15 mins, or until the cheese has melted.
