Cod and Courgetti

This healthy cod recipe is bursting with flavour and is perfect for a light meal. It’s quick and easy to make on a tight student budget!

Ingredients

• One pot of spiralised courgette/ peeled courgette

•2 cloves of garlic, finely crushed

•1 handful of spinach

•75g frozen peas

•75g frozen or tinned sweetcorn

•Two frozen cod fillets

•Approx. 1 pint boiling water

•Salt, pepper, chilli flakes and mixed herbs

Method

• Boil water in a saucepan and poach the fish fillets until cooked (approx. 20 mins.)

• In a separate frying pan, add the crushed garlic, spinach, frozen peas and corn and fry for about a minute before adding the courgetti

• Season the veggies with a pinch of salt and tsp black pepper

• Once the courgettie is soft, serve on a plate and top with the fish.

• Add a pinch of salt, chilli flakes and mixed herbs, and enjoy.
