Food for thought: tortilla pizza
So, yet again we’ve managed to find ourselves in a mad panic before exams. All we want to do is head home after a lengthy revision stint, order Domino’s and fall asleep before the cycle starts all over again. Not many of us think twice about doing this; after all it’s quick and easy, but it’s also greasy and expensive… not the best combination when we’re trying to cram our heads full of information. This recipe can break the Domino’s cycle, and as it’s crammed full of brain-boosting foods, you’ll be ready for those exams in no time.
Looking for something more portable? Follow steps 1 to 5 as stated, and then simply roll the tortilla into a wrap. Cook for 20 minutes, cut in half and wrap in foil for a perfect revision-booster to go.
### Ingredients
– 1 tortilla
– 3 tbsp tomato puree
– Half a 185g tin of tuna, drained
– 2 mushrooms, sliced (Buy them loose and you’ll only spend a few pennies)
– 1 good handful of spinach (If you’d rather save money, broccoli will do just nicely)
– 2–3 cherry tomatoes, halved
– 1 mozzarella ball (Tesco value mozzarella is just as yummy, and only 47p per pack)
Approximate cost per pizza: **£1.70**
(just a little bit cheaper than Domino’s)
### Method
1. Preheat the oven – gas mark 6 should do it (that’s about 200°C/400°F if you’re lucky enough to have an electric oven). It’s also a good idea to put your pizza tray into the oven now to warm up a little; this will help the base crisp and prevent that dreaded soggy base.
2. Lay out your tortilla and spread the tomato paste evenly. 3 tbsp should be just enough but if you’re a puree fanatic, feel free to go crazy.
3. Everyone knows fish is fab for feeding your brain; it’s chock full of omega three which will help to prevent a poor memory. Simply flake some drained tuna onto your pizza and your mind will be rejuvenated by breakfast (that’s the idea anyway).
4. Next up it’s the true superfoods: veggies. The ones I’ve suggested have been proven to reduce stress, anxiety and irritability. Add as neatly or messily as you like but try not to leave too much of a crust as this may burn if not covered!
5. Finally, it’s the all-important mozzarella. Believe it or not, this too has been shown to reduce stress by preventing insomnia and so it’s something you needn’t feel guilty about! Drain the packet, gently squeezing any excess moisture from the cheese and then just tear and scatter amongst the other toppings.
6. Carefully take out the preheated tray, place the pizza tortilla onto it and bake for about 20 minutes, keeping an eye out for any burning edges.
7. Your pizza should come out golden, bubbling and full of revision-inducing goodness. Once you’ve taken it out of the oven, simply slice, sit back and enjoy with some extra leafy greens if you’re feeling particularly brain-dead. Now to find a Facebook-repelling dessert…
